Examine one school’s micro-economy that has contributed to a school-wide food and nutrition program, and see how adolescent efforts can go beyond economic goals to include among their purposes wellness and environmental sustainability. Also, learn how to use food as a vehicle for impressionistic lessons that you can use in cultural, science, art, history, and language that will support and reflect Montessori values at all levels.
